Vermicelli tikkis

A classic example of olive oil making delicious Indian food healthy; these vermicelli tikkis put together all the beautiful tastes and textures that vegetarians so thoroughly enjoy, topping it with the spices and garnishes that are perfect for the Indian palette.

Ingredients

  • Potatoes boiled, peeled and mashed- 4, Medium size
  • Green peas boiled and crushed- Half bowl
  • Onion finely chopped-1, medium size
  • Green chilli-- finely chopped
  • Ginger paste-2 tsp
  • Sooji--Half bowl
  • Vermicelli- Half bowl
  • Maida-4 table spoon
  • Salt to taste
  • Roasted jeera-1 tsp
  • Red chilli powder-1/2 tsp
  • Dry coriander powder--2 tsp
  • Chat masala-1 tsp
  • Finely chopped coriander
  • Leonardo Just Lite olive oil for greasing and cooking

Method

  • Combine boiled potatoes & peas in a bowl and mix well.
  • Heat 2 tablespoon Leonardo Just Lite olive oil in a small pan over medium heat and add cumin seeds. When it splutters, add finely chopped onions and cook till onions turn pink. Now put boiled potatoes and peas mixture to it.
  • Add jeera, dry coriander, red chili powder, chat masala, green chilli, ginger paste and salt to taste. Stir well.
  • Divide the mixture into 6 equal portions and shape each portion into a round flat ball.
  • In another small bowl, take 4 tbsp. Maida and 6 tbsp. water. Add water as required then to make a thick flowing paste. Stir and mix this mixture to get a smooth paste without any lumps.
  • Heat Leonardo Just Lite olive oil for shallow frying in a pan. In the meantime, take tikkis and dip in the maida paste gently.
  • Coat the tikkis evenly with Vermicelli.
  • Apply 2nd coat on tikkis with sooji, dust tikkis properly in sooji.
  • Now put it in pan for deep frying in Leonardo Just Lite olive oil.
  • Garnish with coriander and green chilli.
  • Serve with green chutney and tomato sauce.
